Just be careful not to lift the lid too often while cooking, as the roaster self-bastes the food. Electric roasters are great for cooking large pieces of meat and keeping the moisture in to cook in their own juices.
Now, onto the recipe! Here’s what you’ll need for a melt-in-your-mouth prime rib:”
Ingredients:
- 5 – 7 lbs strandquist family farm prime rib roast
- 3-4 tablespoons butter
- salt to taste
- pepper to taste
- 1 to 2 teaspoons dried rosemary
- 1 to 2 teaspoons dried thyme
- 5 – 6 cloves minced garlic
Step 1: Prepare the Prime Rib
Remove the prime rib from the fridge and place it on a rack with the fat side up. Let it sit at room temperature for a few hours. This step ensures the meat cooks evenly.
Step 2: Season the Prime Rib
Season your prime rib generously with your favorite seasonings. Use a knife to create criss-crosses on the surface and rub the seasonings in. Allow it to rest for 24 hours. Before roasting, blot the meat with a paper towel to remove any excess moisture and help the seasoning stick.
Step 3: Flavor the Roast
Mix butter, salt, and black pepper with minced garlic and chopped rosemary and thyme. Rub this mixture all over the roast, including in the crisscross slits. This will give you a crispy, seared crust that’s full of flavor.
Step 4: Preheat and Roast
Preheat your electric roaster oven to 450°F. Place the meat on the rack inside the roaster and cook it for minutes at this high temperature to get a nice sear.
Step 5: Adjust Cooking Temperature
Once seared, lower the temperature to 350°F. Put the lid on the roaster and continue cooking according to the cooking times based on the size of the roast. After cooking, let it rest before slicing to allow the juices to redistribute.
*Remember, when it rests, it continues to cook. For example, if you want your prime rib rare, take it out sooner than 125 º F.
- Rare – 125º F – 10 to 12 minutes per pound, cooking time approx. 1 hour
- Medium Rare – 135º F – 12 to 14 minutes per pound, cooking time approx. 1 1/4 hours (we like to cook our prime rib to Med. Rare)
- Medium – 140-145º F – 15 to 17 minutes per pound, cooking time approx. 1 1/2 hours
- Medium Well – 150-155º F – 17 to 19 minutes per pound, cooking time approx. 1 3/4 hours
- Well Done – 160º F – 19 to 22 minutes per pound, cooking time approx. 2 hours

1/2 cup sour cream
2 tbsp. horseradish sauce or prepared horseradish, drained
