Ingredients
For the Salad
- 6 ounces penne pasta
- 1 medium size cucumber seeded and , chopped
- 1/4 cup green onion , thinly sliced
- 2 cups cherry tomatoes , halved
- 1/3 cup freshly grated parmesan cheese
- 1/2 cup Caesar croutons
For The Dressing
- 1 (2-ounce) can oil-packed anchovy fillets, partially drained
- 2 cloves garlic,
- 2 large egg yolks
- 1 teaspoon Dijon mustard
- 2 tablespoons lemon juice
- 1/2 cup olive oil
- ¼ cup finely grated Parmesan cheese
- ½ teaspoon kosher salt
- Freshly ground black pepper
Instructions
Salad Dressing:
Blend all the ingredients in a food processor with a pinch of salt, pepper, and a squeeze of lemon juice until smooth, then adjust the taste as needed.
Salad:
Cook the pasta according to package directions, then drain and rinse with cold water to cool. In a large bowl, toss together cooked penne pasta, cucumber, green onion, cherry tomatoes, Parmesan cheese, and croutons. Finally, drizzle with Caesar salad dressing and gently coat everything.
